Changes in Hemicellulosic Neutral Sugars of Tomatoes during Ripening and Effect of Lost Sugars on Ethylene Production


Abstract
This study was conducted to determine changes in hemicellulose composing sugars during ripening in tomatoes (rin and normal cultivar ¢¥Jangsu¢¥) and to find out the effects of loss monosaccharides on ethylene production. Mannose was the major neutral monosaccharide in mature green of normal tomato. Mannose content in normal tomato decreased greatly between stage I and stage II of ripeness, and galactose decreased greatly between stage II and stage III. The contents of arabinose and rhamnose residues in rin tomatoes increased during the postharvest period, and mannose and galactose residues decreased slightly. Infiltrated mannose and galactose stimulated transient increases in ethylene production. It may be suggested that mannose as well as galactose in normal tomatoes has some influence on tomato ripening.
